At Jaynes, we fry the tortilla chips for the Ceviche every time an order is placed: the chips are served still hot and are lightly salted.

Recommended wine pairing: Domaine de la Pépière Muscadet 2006 (Loire Valley, France). Winemaker Marc Olivier uses only natural yeasts in the production of this wine and filters the wine only gently in order to let it retain its structure. A great pairing with all the fish and seafood dishes at Jaynes and one of our favorite natural wines.
